A Journey That Started with a Cruise Ship

Originally from Chicago, Illinois, Mr. Starr’s entrepreneurial journey started early. From selling newspapers as a young boy to owning multiple businesses, he has always been someone who enjoys learning new skills and perfecting every craft he takes on. His introduction to Cabo San Lucas was almost accidental—he first visited as a young traveler on a cruise ship, enticed by the recent opening of Sammy Hagar’s famous bar.

What was meant to be just a quick stop turned into a life-changing moment. A chance encounter with a real estate agent on the street sparked his curiosity about investing in Cabo. Just three months later, he returned, retraced his steps, and found the same agent to begin exploring real estate opportunities. From that moment, he knew he had found his place.

A Coffee Shop with a Vision

Despite his many business ventures, coffee wasn’t always part of Mr. Starr’s plan. He didn’t drink it as a child and only started when he found himself working late nights. “I’d go out with older coworkers who always ordered coffee, and I’d get hot chocolate. People would laugh at me,” he jokes. Eventually, he made the switch, but even now, he only drinks one cup a day.

His motivation to open Land’s End Coffee Roasters wasn’t about a deep love for coffee itself, but rather the experience of having a space where he could work, relax, and create something unique for Cabo. He wanted more than just a café—he wanted a true roastery, a place where coffee was made fresh, on-site, and with a commitment to quality.

The Challenges of Roasting Coffee

Roasting coffee for the first time was an adventure in itself. Mr. Starr describes the process as trial and error, recalling how he even burned himself in the early days. “We had to learn everything—from the right timing to the perfect temperature,” he explains. Over time, he and his team refined the process to a science, ensuring that each roast—whether light or dark—was consistent and full of rich, bold flavors.

At Land’s End Coffee Roasters, they take pride in their two signature roasts: light and dark. As Mr. Starr explains, “Light roast has more caffeine, while dark roast has more flavor.” The roasting process takes between six to seven minutes, carefully monitored through a small glass window that allows them to watch the beans change color and reach the perfect level of roast.

A Community Hub in Cabo

Since opening its doors over three years ago, Land’s End Coffee Roasters has become a staple in the community. From day one, locals and tourists alike have embraced the shop, excited to have a specialty coffee spot in town.

“It’s been amazing to see the same people return week after week, year after year,” Mr. Starr says. As someone who travels frequently between Cabo and other locations, he enjoys seeing familiar faces and knowing that Land’s End Coffee Roasters has become a part of people’s routines.

The Culture of Coffee in Cabo

Cabo’s coffee culture is unique. Due to the warm climate, iced coffee and lattes tend to be more popular than traditional brewed coffee. Despite this, Mr. Starr’s personal favorite remains a freshly brewed cup of black coffee. Thanks to their high-quality grinding and brewing process, customers can taste the freshness in every cup.
